Get a cleanout or expandable test plug that fits. Pull the toilet up and out of the way. The mark will tell you when the fitting is pushed on all the way which is essential for a proper seal. Measure from the end of each pipe and make a depth marking as directed by the push on fitting manufacturer.

Sink 50mm 2 inch cap. Water pipe 1pm caps. You could also probably chip it out with a knife sharp chisel. Unscrew sink lift away.

Plumbers will stock caps you will need to measure across pipe axample 100m 4 inch main pipe cap. Capping them requires the use of a pvc cleaner and a pvc glue to hold the new cap securely.
